Banchan are the small dishes that arrive alongside a Korean meal: kimchi, seasoned bean sprouts, spinach, radish, rolled egg, seaweed. You do not order them, they simply appear, and they are usually refilled without charge. Their number and variety say a great deal about a kitchen — often the first real signal of seriousness, before the main dish has even been tasted.
