You do not order them, they simply appear, and they are usually refilled without charge. Their number and variety say a great deal about a kitchen — often the first real signal of seriousness, before the main dish has even been tasted. The selection is particularly useful if Korean food is new to you: a meal surrounded by six or seven small plates gives a view of the cuisine that a single dish never will. Two honest points: free refills are a custom rather than a rule, and less widely practised in Paris than in Korea, and the line-up changes with the season.
