Gukbap & Soups — Paris

Gukbap means soup and rice, and that is the whole idea: a broth simmered for hours, a bowl of rice that goes into it, and salt, fermented shrimp paste and spring onion that you add to your own taste. Seolleongtang, galbitang, pork gukbap — the bones change, the comfort does not. In Paris these bowls are the closest thing to an ordinary Korean meal, the kind eaten at midday on a weekday or the morning after a long night. Use the late-night filter if you are looking after hours, and read the listings for the venue type: some rooms are very small, which matters more than the menu does when there is a queue.
