Gimbap — Paris

Gimbap is rice seasoned with sesame oil, rolled in a sheet of seaweed around cooked fillings: egg, carrot, spinach, yellow pickled radish, beef, tuna or crab stick depending on the version. It is not maki — no raw fish, no rice vinegar, no wasabi — and the confusion is still common in Paris. It is eaten at any hour, on picnics, on trains, as a fast lunch, and it travels better than almost anything else in this cuisine. This page lists the addresses that treat it as a speciality. It is the obvious choice when you want something to carry away or a light meal with no commitment; the takeaway filter helps. One detail that matters: gimbap is made the same day and does not keep, so eat it within a few hours.
